ITHAA - The world's first undersea restaurant

Conrad Maldives, Rangali Island, Maldives

You cannot miss this stop during your yacht charter in Maldives, the world's first undersea restaurant, Ithaa offers a unique dining experience with 180-degree panoramic views of the surrounding coral gardens. One of 12 restaurants and bars at the Conrad Maldives resort, Ithaa's food blends local spices and Maldivian flavours with western influences.

"It's not just the design that makes it so special, it's the Ithaa experience." says Restaurant Manager Hassan Inaz. "It is a combination of how bright the sun is at the time, the clarity of water on the day, the fish, and of course the service and food."

The restaurant serves a lighter four-course lunch menu and six-course set dinner menu. Highlights include freshly caught reef fish and Oscieta caviar with sour cream and potato blinis. "On yachts you eat above water, but it is quite a different experience to eat underwater", Inaz enthuses.

The dinner service starts at 6.30pm so that guests can enjoy the sunset; which is also best time to see large fish, stingrays and sharks.

The curved transparent acrylic walls were built in Singapore and then transported to the island where more than 85 tonnes of sand ballast was moved into the belly of the structure to make it sink. Set within the reef, the structure managed to withsand the devasting 2004 Boxing Day tsunami.
